Winery and Vineyard waste are a perrenial disposal problem encountered by all. Our solution is based on a waste not want not principle. Our vineyard prunings are mulched and returned undervine as compost. Winery waste, e.g. grape marc, lees, pressings, et al, are all composted and returned to the vineyard as undervine feriliser. Terroir seems to be the better for it.
